With more than 18 years experience, Kon, 36, gained experience in a number of culinary positions in Tokyo, Kyoto, Hokkaido and Sapporo. He is a certified Master Chef and skilled in Hocho Shiki (cooking knife ceremony) which was an Imperial Court tradition.
He is also a licensed fugu chef, a title for those who have qualified through rigorous training to make the perfect fugu fish, one of the most celebrated dishes in Japanese cuisine.
Kon started his career at Miyako Hotel in Kyoto (now the Westin Miyako Kyoto), one of Japan’s prestigious hotels.
At the Yoshino, he will give importance to seasonal variation, as reflected in his continually-changing menu with highlights based on availability of ingredients imported fresh from Japan.
