The Ho Chi Minh City Education and Training Department and Ajinomoto Vietnam Company inaugurated on Sep. 10 a model day-boarding school kitchen at Trung Trac Primary School in District 11.

This kitchen model was built under the School Meal Project, which aims to standardize kitchens in primary schools.

The “Day-boarding School Kitchen Model” was built with modern equipment, applying one-way kitchen model from receiving materials to finished products and cleaning.

Steps of materials receiving, food pre-processsing and processing are designed separately, which help the whole cooking process from input to output be controlled closely and ensure food safety. These steps are also allocated reasonably to maximize space that help reduce tasks of cooking staff.

Ajinomoto Vietnam Company sponsored more than VND1.3 billion to build and equip the kitchen with basic cooking tools and gadgets.

The “Model Day-Boarding School Kitchen” at Trung Trac Primary School offers an example for other day-boarding primary schools in HCMC and other provinces to study so that they can refer to and apply according to their situation.

Since 2012, Ajinomoto Vietnam Company has cooperated with the HCMC Education and Training Department and the HCMC Nutrition Center to carry out the “School Meal Project” in order to improve nutrition and health status of pupils in day-boarding primary schools in the city.

The School Meal Project in HCMC includes three main contents: develop “nutrition-balanced menu” to improve nutrition status of pupils; improve pupils’ awareness of nutrition through a program called “three minutes to change awareness”; and “standardize the kitchen” and increase self-serving awareness to pupils.

After HCMC, in 2013 Ajinomoto Vietnam Company cooperated with National Institute of Nutrition and Da Nang Education and Training Department to deploy “School Meal Project” in Da Nang.

According to the plan, Ajinomoto Vietnam Company will cooperate with relevant organizations to expand this project to other provinces in order to contribute to improving nutrition situation in Vietnam.
